Traceability Challenges for Sauces and Dressings Manufacturers

The versatility of sauces and dressings presents both opportunities and challenges for manufacturers.

On the one hand, it gives them flexibility in how they sell their product. For instance, the exact same sauce could be sold directly to a supermarket, in bulk to foodservice outlets or for use in prepared packaged foods. This allows manufacturers to benefit from more revenue streams, making them less reliant on individual buyers.

However, the flip side of this advantage is how it complicates traceability. With so many different paths their sauces can take, gaining visibility over the entire supply chain can be even more difficult than it is for other types of food businesses. Read on to learn more about the traceability challenges inherent in the sauces and dressings industry, and how your company can gain better control.

Why Is Traceability Such a Challenge for Sauce and Dressing Manufacturers?

Throughout the food industry, the need for farm-to-fork traceability is becoming more and more pressing. Simply put, farm-to-fork traceability means all stakeholders in the supply chain having full “bi-directional” visibility (they must be able to trace backwards from their customers and forward from their suppliers).

Sauce and dressing manufacturers exist in a particularly difficult part of the supply chain, whereby they must trace a large number of ingredients used in their products and a large number of shipments leaving the factory. If an end consumer falls ill after consuming a sauce or dressing product, time is of the essence in tracking down and recalling the compromised batch and the compromised ingredients which have caused the problem.

If proper traceability arrangements haven’t been made, finding the source of the issue can take weeks—causing untold financial and reputational damage while shipments are suspended and items recalled. This danger is so acute for sauce and dressings manufacturers because of the sheer number of branches and critical tracking events their supply chains contain. This makes manufacturers arguably the most crucial part of the entire supply chain from a traceability point of view. If they can’t quickly identify substandard ingredients, the batches they affect and where else these batches have been delivered, every stakeholder from farms to retailers are in trouble.

It’s easy to see why having watertight, bi-directional traceability (and the ability to prove traceability credentials) is so important for modern sauce manufacturers. Retailers, restaurants and other manufacturers are far more likely to do business with your company if they feel confident you will be able to help them shut down any potential food safety breaches quickly. In fact, larger retailers will often require you to pass mock traceability audits before agreeing to any deal, while food safety regulators continue to tighten their rules.

How Can Sauce and Dressing Manufacturers Achieve True End-to-End Traceability?

Fortunately, there is a solution for sauce manufacturers looking to ease their traceability worries in the shape of specialized food manufacturing ERP (enterprise resource planning). Food and beverage ERP tightens up data collection, digitizes processes and brings all data onto one database—providing a single source of truth for manufacturers. In an industry where manual processes and fragmented data are still commonplace, this is the crucial first step towards end-to-end traceability.

But food manufacturing ERP for sauces and dressings does so much more than that; it comes stacked with a host of tools designed to give food businesses full visibility over their supply chains and help them take rapid action when the need arises.
